Table Rock Lake, Missouri Vacation

What is today? Saturday? I've lost track, but I thought I'd check in with the world outside Missouri (Locals actually say "Miz-ur-a") and fill you in on what we've been up to on our little Midwest getaway.

This trip is the first time I've actually been to my dad's new house, even though he's lived here since last October. He's got a great place, with a open floor layout, nice big kitchen, big bedrooms, and 4 bathrooms. It fits him perfectly and its nice that he has a couple of guest rooms for when we all come to visit.

The Branson Airport is a tiny little airport on the top of a solid rock of a mountain. We arrived Wednesday after flying through Denver. 

We met Dad's new neighbors, specifically the neighborhood grandma that is "taking care of him." Her name is Bev and she sits in the sun everyday to work on her tan and when she smiles her leathery wrinkles stretch to expose the light colored skin that the sun missed.  She gave me a huge hug upon greeting and wouldn't let go of my hand as she smiled lovingly at me and asked me dozens of questions. She also announced to us that she was going to cook up an authentic hill billy Cajun crawfish bake for dinner. And she did. 
And it was absolutely incredible. 

To put it another way, my brother stuffed himself to the gills, fell asleep immediately after dinner, then woke up at 1 a.m. and at two large containers of leftovers that I thought I had hidden in the fridge for lunch the next day.

I told Bev what my brother had done and she laughed and promised to give me the recipes. So maybe I can whip up some authentic Cajun food for ya'll soon!

The next day we tried authentic B-B-QUE. I guess authentic is the theme of the week.


My dad claimed this is the best BBQ he has found and what makes it really special is that they actually slowly smoke the meat outside in a big smoker all day long instead of rubbing it with liquid smoke like most of the other places do to "cheat".

He claimed that what drew him in in the first place was that he drove by on smoking day and the smell was so intoxicating that he couldn't help but stop and see what it was about.
He's come every week since.


Inside it's basic hill billy decorations. No fine dining here. Paper towels and wet naps. 

 My brother, Kyle, was stoked to find a new hot sauce to try. Incase you can't read the fine print on the bottle, that one is called "Colon Cleanser".
I begged him to wait to open it when he gets back home. He claims it will make one hell of a bloody mary!

With three grown men boys at the table, the food disappeared so fast that I couldn't whip my phone out fast enough to photograph for you what authentically smoked BBQ looked like. But on our sampler platter we had ribs, half a chicken, smoked sausage, brisket, fries, baked beans, coleslaw, and a cheesy corn thing that was quite tasty.

My brother flew out later that day (we had two days together as a complete family and believe me, that was definitely enough time!) and then it was just Dad, Mark and me. We decided to beat some of the heat by checking out one of the local caves tours.


I snapped a few photos of the stalactites and stalagmites, curtains, and soda straws for you. It was pretty amazing in person, but I just can't do the beauty justice with my little i-Phone camera. Oh well. You get the idea. We had fun.

 All that learning left us quite thirsty and we couldn't resist but hit up my dad's local dive biker bar. It's tacked on to a dicey motel that had a few shiny Harley's parked out front. Inside was pretty awesome as far as dive bars go. Stale smoke, grafiti all over the walls, t-shirts, swear words, and bras tacked on to the walls, and a bar tender with a white curly mustache wearing leather pants and a flannel shirt greeted us with a smile and great conversation.

I learned you can't judge an old biker bartender. He served in the military, met his wife in Spain, got married in Italy, settled in New Orleans on sail boat giving cruise tours to tourists until Hurricane Katrina wiped out everything they had and the started over in MO with this bar. Nice guy. Never asked his name.

We finished up yesterday evening with some bass fishing on my dad's lake. All in all we caught three fish, but the third got away. Mark caught this little fighter, I caught a baby bass on a lure bigger than the fish, and then I got a giant hit on my line not three minutes later from the little guy, and my lure was gone. The big one bit through my line, never to be seen or photographed.



 No big fish tales here!


This morning was my favorite so far. I convinced my dad to take us out to the local berry farm to pick blueberries. The sun was HOT by 10 a.m. when we arrived, and I think we could only manage to pick for 45 minutes before giving up and calling it a day. I do love me my blueberries though! And at $2.85 a POUND, you can't go wrong.



 I peaked inside a window off to the side to discover a cute little old lady baking these beauties, and my heart literally melted to the floor. I had to have one. 


 Appropriately called a Thunder Muffin, probably for what it does to people's thighs or something, it was the very best blueberry muffin I've ever had in my life. 


Back at the house we headed out on the boat for our daily touring of a new part of the lake. We boated for 45 minutes to a little marina where we docked the boat and had lunch outside.

I think Missouri has the best unhealthy food. There's certainly evidence of this being so. Fresh crawfish Cajun, BBQ, Thunder muffin, and the onion rings and burgers we ordered at the dock. I'm a firm believer in enjoying vacation responsibly, and so far I'm making sure to enjoy all the local eats I can.


Sunscreen was applied, but clearly 95 degrees got to him. Poor guy. Don't worry, I made him put his shirt on and sit under the canopy for the duration of the trip. 
Aloe is forthcoming.

After quick stop at a funny little island in the middle of the lake, we headed home. It was funny to see all these boats pulled up to this pathetic thing of an island, especially since it was all rocks, but the locals seemed to enjoy it tremendously. I guess I am a yuppy who's used to sandy beaches.

I preferred to stay on the boat and save the bottoms of my feet. 

We're having incredible fun so far. Tomorrow we're going to go on a little dinner cruise and do some more fishing, and maybe some tubing.

I have more pictures to share on my other camera, but alas, I left the cord back in WA, so you'll have to wait until next week to see those.

Sir Mix-A-Lot and A Week's Worth of Updates

I have a hefty load of things to tell you about and its hard to choose which one to choose first. Our lives are wildly exciting this week and especially today as many of our long term goals we have worked toward are coming into being as I write.

I have been rather quiet about these goals. I think I felt like if I put them out there before the goals were met then I'd somehow jinx them or something. I know that is silly. It's silly right? We've just been working sooo hard toward this goal. I don't want to mess anything up.

Our plan since January has been to buy our first home in the lovely neighborhood of West Seattle. And we wanted to accomplish a decent down payment and buy the home before the end of summer 2012. Ambitious of us, but that's who we are. We work hard for what we want. Dave Ramsey says it best, "Live like no one else, so you can live like no one else." We intended to do just that.

We worked our tails off these last six months, sacrificing social life, dining out, time together, and shopping sprees. Mark acquired a second job and worked seven days a week since February including a double shift every Friday. I did some extra babysitting and took on sole responsibility of keeping the house in working order and food in my husbands belly that was not from a fast food joint, thus defeating the purpose of saving money by spending extra money. It worked. And we saved every penny we could. And prayed. A LOT.

The result has been worth it. Mark quit the second job this past Friday and I now have my husband back on the weekends. We have our down payment ready, are currently working with a relator and are just waiting for the perfect house to come along to make an offer on and fight for.

 Guys. This is huge! Other than my bachelor's degree I've never worked so hard and so focused for anything in my life. It's been difficult and emotionally challenging. Yet, standing on this side, the completed side, it makes it all worth it. I'm so proud of my husband too, as he pulled the long nights and tired days. He deserves serious props.

Why? Well, because we're going on vacation on Wednesday! Say hello, Missouri! We'll be visiting my dad at his new lakefront house. To say we're excited is an understatement. Nobody has ever needed a relaxing vacation more than my husband. He's beat and deserves a little R&R.

Another thing this week is that Mark's company part was also this past weekend. Local readers will know the coolness of the location, but let me inform the rest of my readers that The Market Showbox is a really cool place to have a company party. It's a beautiful music venue in the heart of Pike Place Market with multi levels, seating, great cocktails, and space to move around so you don't feel crunched into one big area.

I loved the giant balloons.

  And I screamed like a teenage school girl at a Justin Bieber concert when Sir Mix-A-Lot made a surprise appearance! I seriously loved it.
(Yes, it was really him, which I also find hilarious considering my recent post Baby Got Back, Butt, and Belly.)


Not that I know any of his music other than the Big Butts song. But the surprise made everyone in the venue so excited and ready to party that it was infectious.

 Best part? Sir Mix-A-Lot requested for a bunch of ladies to join him on the stage. You probably see where this is going already, but I'll fill you in just in case. Girls on stage..for Big Butts song. 

Well, if you watch the video below...the girls dead center are leaders on the HR team! Mark was really getting a kick out that. Thankfully nobody lost any serious dignity being up on stage.

And working my way backwards on the company party night, this year's theme was a masquerade. So we made our own masks, and got all dolled up for a night on the town.

 And because I'm blind and can't seem to wear contacts without scratching my eyes out, I wore my mask for exactly an hour, where I held on to mark to lead the way, and then I changed back into my glasses.   


The evening was a blast and it was such a special night to have my husband by my side--we haven't had the opportunity to do that in a while.

I'm off to Missouri on Wednesday morning, bright and early! I hope to post at least once while there, but if I can't I promise to get some good sun, wear adequate sunblock, swim, water ski, jet ski, eat yummy BBQ, read at least one book, and savor all quality time with my husband and my dad.

BBQ Chicken Rolls & Buffalo Chicken Rolls

We recently were forced to said goodbye to some of our dear friends. They're moving across the country to South Carolina so he can go to school and their going away party was last weekend. 

It was a grand reunion of sorts! We have a very large group of friends who have, in one way or another, all been connected through bible study and church at some point in the past five years. And in all honesty, it was one of the best relaxed, no forced conversations and small talk gatherings I've ever been to. It's not that I don't like meeting new people, because I do, but this party was all about saying goodbye to our near and dear, and I wasn't in the mood for making new connections, and thankfully all my favorite people were there and we all had a great time catching up. 


We were invited to bring a finger food to share, and you know me, I can't pass up the opportunity to cook. Cooking relaxes me, fills the creative void that develops when too much time passes, and just gives me that satisfaction that I would imagine others get from taking a bubble bath or getting a massage (both things I, sadly, rarely do).



So after combing through Pinterest (follow me!), I landed on the perfect finger food. A little twist on the traditional egg roll--BBQ chicken, cheddar, and slaw. These little chicken wraps were SO easy. They took only 45 minutes start to finish and were a hit at the party! 



These are easy-peasy. 
Don't be intimidated.



Nothing fancy. 
All ingredients found at Safeway or Trader Joe's.




Egg roll wrappers are found in the refrigerated section next to the tofu, or veggie meats, and udon noodles. For me, this was the same refrigerated case that also has bagged spinach and refrigerated salad dressings. And they were the easiest ingredient to work with.

Since I followed the recipe exactly, it is only proper to send you over to the recipe I followed. Maybe you'll fall in love with Andie Mitchell too. She's pretty incredible. With a weight loss story that left me impressed and her approach to healthy living that I think all of Hollywood needs to adopt, I bet money you'll be sold too. The first time I found her blog I sat on the couch for 3 hours reading back through her blog history of 2012 and 2011. Until 1 a.m. 

I've got a new blog crush.

And who says you have to follow the recipe exactly like I did? Why not try an Asian inspired version, or perhaps something with marinated shrimp. Or steak! I love steak.

Sugar-Free Pumpkin Pancakes

WELL!  I had quite the inventive morning! I woke up craving me some warm fluffy carbs. Normally I turn to oatmeal for my warm carb-y fix, but today felt... different.

 I turned to Dana at My Little Celebration for some die-hard pancake inspiration. And believe me, this girl KNOWS her pancakes. She has 14 different varieties on her recipe page and probably more tucked away in her mind for future breakfasts. 

She's a pancake expert.

Me? I make them about once a year. Which translates to--I needed help.


I'm pleased to tell you that my inventive juices (and a little direction from Dana) created a heavenly wholesome breakfast with a hint of sweet and a punch of savory that I promise to make again and again. My once a year pancake consumption just increased by 800%.

I'm currently digesting these pumpkin pillows and all I can think about is making another batch, perhaps double, and freezing them so I can eat them all week long.


Wow. That's a really good idea.
I think I'm going to do that. 

Something to know, these are sugar-free and egg free, but I'll show you options to add those back in to make them even fluffier. I chose to make them sugar-free and egg-free due to some digestive issues I'm currently working through. 

And with those adaptations, I felt there was nothing missing. 
Nothing.


SUGAR-FREE PUMPKIN PANCAKES
adapted from My Little Celebration


makes five 1/4 cup batter pancakes.
1/4 c oat flour [ground from oats]
1/4 c whole wheat flour
1 tsp xylitol [or equal amount of sugar]
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground cinnamon
double dash of nutmeg
dash of cloves
dash of ginger
pinch of salt
1/2 flax egg [1/2 T flax mixed with 1.5 T water]
1/2 c low fat buttermilk [or sub 1% + 1 T lemon juice]
1/4 tsp pure vanilla extract
1/3 c pumpkin puree [not pumpkin pie filling]

In a small bowl whisk together dry ingredients. 

In a medium bowl, mix your flax egg and allow to sit for 2 minutes. If making buttermilk, mix this together and allow ti sit for 2 minutes also. Combine flax egg and milk and whisk together incorporating air for fluffiness. Add vanilla and pumpkin until well combined. 

Fold in dry ingredients until just combined. Allow to rest for 5-10 minutes, while your griddle heats up to a medium heat. Using nonstick oil or butter, grease pan and use 1/4 cup of mix to form your little pumpkin cakes. Allow to cook until you see bubbles pop on the surface of each pancake. Flip and allow to cook for another 4-6 minutes until cooked through. 

Enjoy with peanut butter and fresh berries! 

Each plain pancake packs 63 calories, 2.5 grams protein, and less than 1 gram of fat.

New Challenge: Move More In May!!

I'm taking on a new challenge.
This month, I plan to move more.
Not workout harder. Move more.

I opened up my blog reader this morning to find Janetha's post/challenge to move more. I immediately identified with her motive because like her, I too live a fairly sedentary lifestyle, outside of the hour I give to a workout. Want proof? My day starts horizontal (obviously) in bed, and I move a little bit around the house in the morning. I then walk five blocks to the bus stop and I sit again.
For 30 minutes.
Downtown Seattle I get off the bus and do the majority of my intense movement that is not workout movement. I walk four blocks uphill and generally I try to walk them as fast as I can to beat the traffic lights. If I time it just right, I don't have to stop and wait at all and I love that.

I then walk into my building, up one flight of stairs, and into an elevator that lifts me 31 more floors.

I sit all day long.
I may walk to the kitchen.
Or the bathroom.
But generally, I'm parked until lunch.

Lunch I workout. Doesn't count in this challenge.

And then I park it again until the day is over.
At that point I walk back downhill four blocks. Actually I often run them because I press my luck with the bus schedule, and subsequently make a fool of myself everyday, being THAT girl who is running in high heels down hill to catch a bus. But whatever.

On the bus I nap, because I'm the last stop and again, I just don't care what people think.
 I walk five blocks home. Make dinner, eat while sitting on the couch, lounge with the husband watching TV and go to bed.
And to cap it off, I don't do a whole lot of lifting aside from my purse, which weighs at least five pounds or occasionally my 10 pound cat. But mostly she sits on my lap after dinner.

So I'm taking on this May challenge to move more.
I'll be posting my extra movement on Janetha's Move In May page each day, and maybe! If the stars all line up, I'll win one of her generous prizes. The grand prize is a gift card to Lululemon, and weekly prizes of Fit Mixer, Contigo bottles, and Nunaturals Lemon Flavored Stevia. But even if I don't win a prize, I think an extra effort to move throughout the day will be a great challenge and added benefit to my health.

Some of the ideas I already have to move:
  • Borrow a dog to chase--I'm trying to love dogs more considering Mark wants one soon. Anybody got a dog I can exercise for you?
  • Squats in the work kitchen. I hope I get some weird looks.
  • Evening walks with the hubby= quality time.
  • Walk to Starbucks--6 blocks away
  • Scrub the floors by hand-they need it
  • Walk the 31 flights of stairs in my work building.
